Recipe of the Week | Chicken Pot Pie

Watch Jillian's weekly cooking video. This week she shows you how to make her savory yet simple chicken pot pie.

Ingredients:

Meat of 1 rotisserie chicken
2 carrots chopped
1/2 yellow onion chopped
1 can corn
1 small shallot diced
1 small broccoli crown cut into bite size pieces
6 tbs butter
1/2 cup all purpose flour
1/2 cup heavy cream
4 cups chicken stock
Salt and Pepper to taste

Turn stove top on to medium heat and add butter to pot.  When melted add onions and shallot.  Sweat the mixture until the onion and shallot are translucent.  Next add the flour and whisk until the mixture smells like almonds.  Add the rest of the vegetables and one cup of the chicken stock and saute until vegetables are softened (about 5 min).  Next add the rest of the chicken stock and the cream.  Let mixture thicken for another 5 minutes stirring frequently.  

In pie pan, add chicken, distributing evenly throughout the bottom of the pan.  Next, pour vegetable sauce mixture over the chicken.  Unroll the pie dough and spread over the top of the pan, taking care to pinch the edge of the dough over the sides of the pan (to avoid overflow in the oven).  With knife, add a few slits to the middle of the pie dough to let air out as the pie cooks.

Bake pie in the oven at 350 degrees for about 40 minutes or until pie crust is golden brown.  Remove the pie and let stand for five minutes to settle.
