I hope you all had a good holiday and are off to a happy and healthy start in 2012. As I thought about a new theme for the new year, I asked myself, "how can I make dinner quickly, with the least amount of fuss, and my family will still eat it?" My family is not particularly fussy, so that's not the hard part; they'll ususally try whatever I cook. Usually it's the amount of grocery shopping, preparation time and clean up necessary that deters me from making dinner. So I started searching for recipes with few ingredients that are easy to find in the grocery store and only require one pot to cook them in. Here's my first attempt: It's called "Modified" Asian Noodle Soup.
INGREDIENTS:
- 1 14 oz package of firm Tofu
- 1 10 oz package of Chinese noodles
- 2 32 oz containers of low sodium chicken or vegetable broth
- 1 medium head of Bok Choy
- 1 tsp chopped garlic or 1 Tbsp fresh chopped ginger

- Pour both containers of broth into a large stock pot along with the ginger or garlic. Heat on medium high heat and bring it to a boil.
- Meanwhile, roughly chop the bok choy and rinse under cold water to clean it thoroughly.
- Drain the tofu and dice into small cubes
- Once the stock is boiling, add the tofu and half the package of Chinese noodles. Bring it back to a boil and cook for 2 minutes. Then, add the bok choy and cook for 5 minutes covered.
- Serve and enjoy!
It's simple. Of course if you like grocery shopping and you want to expand upon the recipe feel free to improvise and add mushrooms, green onions, mini-wontons, lean ground meat in place of tofu, snow peas, and you can even use Ramen noodles(not including the spice packet).
