5 ingredients in 1 pot ~ Chicken Chow Mein

Homemade chow mein that's easy and economical with only one pot to clean!

Either I have no imagination or I have a real hankering for Chinese take-out. This version of Chicken Chow Mein is amazingly easy, much more economical than actually getting take-out, fairly low in sodium, AND makes enough to serve six.

INGREDIENTS: 

  • 12 oz cooked chicken strips or three 4oz chicken breasts cut and sauteed
  • 4 14.5 oz cans bean sprouts in water, rinsed and drained
  • 2 5 oz cans sliced water chestnuts, drained
  • 2 cups low sodium chicken broth thickened with 1 1/2 Tbsp corn starch
  • 1 Tbsp grated ginger

DIRECTIONS:

  • Spray a large saute pan with cooking spray and heat/cook the chicken strips over medium-high heat with 1 Tbsp grated ginger.
  • Add the 4 cans of rinsed and drained bean sprouts, and the 2 cans of water chestnuts to the pan with the chicken and heat thoroughly.
  • Add 1 and 1/2 cups chicken broth to the pan and bring to a boil. Mix the remaing 1/2 cup chicken broth with 1 1/2 Tbsp corn starch.
  • Add the corn starch/broth mixture to the pan with everything else, and continue to stir as the sauce thickens. Simmer for 10 - 15 minutes.

Optional ingredients to add include diced celery or sliced onion. Serve with crispy chow mein noodles or season to taste with soy sauce.
