Another Great Game Day Recipe. And Still Only a Basketful of Ingredients.

I'm on a roll with more Buffalo Chicken!

Excuse me for being boring, but I just had to share this recipe for Buffalo Chciken Wings that I made several months back when we were all watching the Bruins in the playoffs. Now that the New England Patriots are in the Super Bowl, I can't think of a better time to bring it back! In the next couple of days, many of you are likely to be hitting the grocery store for your Super Bowl party food, so here are the ingredients you'll want to be sure to pick up:

INGREDIENTS: 

  • 5 lbs chicken wings. You can buy them whole and cut them up yourself into parts or you can buy just the drummettes, or you can even buy 2-3 lbs of whole, skinless chicken breasts and cut them up into strips like I did for a little healthier version of this American classic.
  • 1 tsp salt, 1 tsp fresh ground black pepper
  • 2 TBSP hot sauce
  • 2 TBSP vegetable oil
  • 1 1/2 cup all-purpose flour
  • 1 cup of your favorite Buffalo Chicken Wing Sauce

  • non-stick canola oil spray
  • large mixing bowl
  • aluminum foil
  • 2 sheet pans

DIRECTIONS:  

  1. Preheat the oven to 400 degrees.
  2. Cut your chicken wings into 3 parts at the joint, putting the flat part and the drum into a large bowl, and discarding the wing tip. Or, slice your chicken breasts into finger width strips.
  3. Toss the chicken with the salt, pepper, hot sauce and oil, coating evenly.
  4. Then add the flour to a large plastic storage bag, add the chicken, close the bag and shake vigorously to coat all the chicken in flour.
  5. Cover the baking sheets with foil and spray heavily with cooking spray. Spread the floured chicken out evenly on the foil, and spray lightly with the cooking spray again.
  6. Bake the wings in a preheated 400 degree oven for 30 minutes for wings, 10- 15minutes for strips. Remove from the oven turn each wing or strip over, return to oven and cook for another 30 minutes (for wings), or 10 minutes for strips. The wings should be golden-brown and the coating slightly crispy.
  7. While your chicken is cooking, make your Buffalo Wing Sauce, or heat 1 C of your favorite store-bought sauce in a saucepan on the stove top to a low simmer, turn off, and allow to cool.
  8. Once the wings are done cooking, transfer 1/2 at a time to a large bowl and coat with a 1/2 Cup of your Buffalo Wing Sauce. Plate these babies and then coat rest with the remaining sauce.
  9. Once plated allow the chicken to rest for 5 minutes, if you can resist, so that the sauce has a chance to soak in and they are cool enough to handle.

I'll admit I borrowed this recipe from www.americanfood.about.com. It's not the simplest recipe to make, but I think you'll be happy with the results!
