Cucumber Harvest: Summer Salad Series cont.

Bursting onto the scene in my garden this week ~ CUCUMBERS!

The bounty from a few cucumber seedlings planted only 8 weeks ago is here! The picking began last week and every day more and more are ready. Now it's time to find the easiest, tastiest and most useful ways to enjoy them.

In keeping with the theme of simplicity, I found this light and refreshing recipe on SimplyRecipes.com. It's a cucumber yogurt salad that requires minimal preparation and only a handful of ingredients (counting salt and pepper!).

INGREDIENTS:

  • 2 cucumbers, peeling is optional, quartered lengthwise, then sliced into chunks
  • Plain yogurt, about 1 cup, Greek yogurt is good
  • 1 tsp dried dill, or a couple of teaspoons of fresh
  • Sprinkling of salt and pepper to taste

 

DIRECTIONS:

  • To assemble the salad, gently toss the ingredients until coated with the yogurt and dill dresssing.
  • Salt and pepper to taste.
  • If you find your cucumbers are bitter, soak the cucumber chunks in salted water for about 30 minutes, or so, until the bitterness is less, and then rinse and drain before using.

 

Since my cucumbers are a smaller variety, I used 6 cucumbers with a little more than a cup of yogurt, 2 tsp dried dill, 1/2 tsp salt, and 1/4 tsp pepper.

Rather than yogurt and dill, you could also use sour cream and chives. Many recipes are derived from different heritages and cultures, so there are a variety of ways to prepare them that are all delicious!

So now, how do I use up the rest of my cucumbers? Cucumber salsa? Cucumber relish? Cucumber sandwiches? Cucumber facial? Yeah, that sounds good!
