First Day of Summer! Salad Series cont.
The kids should like this one. Break up your noodles, be it spaghetti, angel hair or ramen, and tell them it's worms!
This recipe was created by a colleague and I a couple of years ago. We made it to give away to all of our friends. We were acting under the idea of "paying it forward" and doing something nice for someone else. Our friends were thrilled! Recently, I revived the recipe and shared it with new friends. They were equally excited and wanted to know where they could get the recipe. Here it is!
Asian Noodle Salad
Dressing Ingredients:

- 6 Tbsp Rice Vinegar
- 3 Tbsp Sesame Oil
- 3 Tbsp Soy Sauce
- 2 Tbsp Honey
- 4 tsp Ginger
- 1 tsp Garlic
- 3 Tbsp chopped Cilantro
Salad Ingredients:
- ½ cup Red Pepper chopped
- 1 cup Baby Corn chopped
- 1 cup sliced Water Chestnuts
- ¾ cup chopped Green Onions
- Optional: Add 1 cup grated Carrot, or 1 cup Cucumber, 1 Tbsp
Sesame Seeds
Angle Hair Pasta (1 lb) broken into quarters - Substitute your favorite pasta or noodle

2 cups diced cooked Chicken – make it vegetarian by leaving out the chicken or replacing it with firm tofu cut into small cubes.
Directions:
- Cook noodles, chill under cold water and drain. Set aside.
- In a medium bowl, toss together salad ingredients.
- In large bowl combine all ingredients.
- Whisk dressing before adding to salad. Mix dressing and salad thoroughly.
- Sprinkle with sesame seeds.
- Cover with plastic wrap, chill in the refrigerator.
