It's December 1st and there's a chill in the air today. Time to cook up something that'll warm you up when you walk in door. Soups are super easy to make in a crock pot and let simmer all day. This recipe for Corn Chowder is a compilation of a couple different recipes and can also be done on the stove top in a large stock pot. The following recipe serves 4; I would definately recommend doubling it!
INGREDIENTS:
- Six slices of bacon, Canadian bacon or ham
- 1/2 C chopped onion
- 2 C potatoes, washed and cubed
- 2 C corn, fresh, frozen or canned
- 1 14.5 oz can cream corn
- 1 TBSP sugar
- 1 tsp seasoned salt or buillion cube
- 1/4 tsp pepper (add more to suit yourself)
- 2 C water, broth, milk or half-n-half(or any combination)

- Saute bacon, onion, and potatoes (if you use Canadian bacon or ham, add 1 TBSP olive oil to your saute pan)
- Once sauted combine with all the remaining ingredients in your crock pot and cook low and slow for a few hours. Then add the liquid of your choice, and heat thoroughly before serving.
- If cooking in a stock pot, cook on low and simmer for 30 -45 minutes, stirring frequently to avoid sticking. Increase to medium-high heat, slowly add the liquid, stir, and bring to a boil before serving.
Top your chowder with a little grated cheese and serve with crusty warm bread! YUM!
